News update: After last week's Crowsnest piece went out, the applicant agreed to give city staff more time to review the proposal and address outstanding questions. The Planning Commission will now consider the proposed Planned Development zoning on March 26, with City Council holding first and second readings on April 7 and 28. Read more here.
Some of you may have noticed Wild Goose Saloon events in last week's newsletter. Unfortunately, they closed their doors before I hit send. The space is now listed for sale — and behind it is a really difficult story.
I didn't know Chris Dellinger personally, but according to Tabatha, a close family friend running his GoFundMe, Chris — the owner and a longtime local musician — was diagnosed with Stage 4 metastatic prostate cancer back in November. He's been juggling medical bills, doctor's appointments, and trying to keep the business running. She writes that anyone who knows Chris knows he's always stepped up to help other families and musicians in their time of need.
Chris starts chemotherapy today. The hope is that with the right treatment, he can get into remission and focus on his health. The community has already rallied — over 600 people have donated, and they're closing in on $75K. His family says they're overwhelmed by the generosity. If you're able to chip in, here's the link.
Mainstreet Is Getting a New Food Cluster in Parker
Marvin’s Place is already open at The Juniper, and it’s a little different from what Parker usually gets.

The space leans minimal and design-forward rather than the typical cozy coffee shop. Concrete floors, clean lines, walnut shelving, and curated books give it more of a European café or gallery vibe than a laptop-packed workspace.
There’s even a sign on the counter that reads: “No WiFi. This is the good part. Don’t miss it.”
Which tells you pretty quickly what they’re going for.
I initially read it as “No Wife” and thought the place was speaking directly to me until I took the photo and read it a second time.

I tried to grab a scone while I was there, but they were already sold out. Turns out they get them from Poulette Bakeshop, which is also moving into The Juniper, so that connection already exists between the shops.

Playa Bowls (Grand Opening March 7th)
Playa Bowls is bringing its beachy acai bowl concept to Mainstreet. We’ve enjoyed them down here in Castle Rock, and things have gone well enough that they’re now opening a Parker location.
Expect:
Acai + pitaya bowls
Smoothies
Bright, high-energy branding
Grand-opening type promos
This adds daytime traffic and gives downtown a healthier fast-casual option. It’s a different lane than Marvin’s, but the two complement each other well.
Poulette Bakeshop (Moving to The Juniper)

Poulette Bakeshop is moving from their location off Hess Road to The Juniper. This place needs no explanation. If you don’t know, you’ve got to check them out no matter where you live.
If you’ve been to their other shop, you already know the draw:
European and American-style pastries
Croissants, macarons, and other classic French patisserie
Fresh breads and seasonal treats
The new location will be bigger, have seating, and give them the ability to produce more.
Their final day at the Hess Road location is Sunday, March 8. The new spot opens Wednesday, March 11 at 8:00am.
They’ll be keeping the same hours for the time being, with the hope of extending them further down the road.
Between Poulette, Playa, and Marvin’s, Mainstreet is shaping up to have multiple strong morning options lined up right next to each other.
Cask & Trotter (Under Construction)
Cask & Trotter is still under build-out, with more details expected later.
This will likely anchor evening traffic once it opens. For now, it’s one to watch. It’s from the owner of Wolf Peach.
