Homegrown Tap & Dough Opening in Castle Rock

Homegrown Tap & Dough is officially opening its newest restaurant in downtown Castle Rock this December, marking the brand’s sixth location and Gastamo Group’s 15th overall. The space at Third and Wilcox will feature an “elevated ranch” design with rustic wood finishes, Pendleton fabrics, and Western touches that nod to the town’s heritage.

The 6,020-square-foot restaurant will seat more than 220 people indoors, plus a 35-seat corner patio that connects to the dining room when the garage doors are open. Guests will also find private and semi-private dining rooms designed for holiday parties, graduations, and community events.

The menu leans into approachable Colorado comfort: hand-tossed pizzas, quality pasta dishes, burgers, shareable starters, and a lineup of local craft brews and cocktails. Gastamo Group says the Castle Rock location was built with numerous local partners and is designed to become a true neighborhood gathering spot.

McCanta Drive Realignment Approved

Douglas County approved a replat for Canyon South Filing 1A that realigns an unbuilt portion of McCanta Drive and transfers the roadway to the Town of Castle Rock. The change does not add new homes, but it’s intended to improve emergency access between Castle Oaks and Founders, including faster response routes from the Castle Rock Fire Station.

A few nearby residents raised concerns about the new alignment shifting closer to existing homes and affecting open space and trail connections. Staff noted that comments were addressed during the review process and that the realignment still meets engineering and safety requirements.

The replat covers roughly 110 acres and is now cleared for final recordation.

Crowsnest Annexation Update (Castle Pines)

The 795-acre Crowsnest annexation petition took a small procedural step this week in Castle Pines. At the November 11 meeting, City Council voted to continue the first reading of the annexation and development agreement to December 9 to allow more time to gather information about potential impacts.

No other decisions were made.

If Council eventually approves the annexation early next year, zoning would be required within 90 days.

Egg Harbor Café Coming to Highlands Ranch
TLDR: Egg Harbor Café, a Chicago-based breakfast and lunch spot, plans to open a Highlands Ranch location at 9579 S University Blvd in the former HopsnDrops space. It will be the brand’s second Colorado location. No opening date has been announced.

Unity on Wolfensberger Moves to Town Council
TLDR: The Castle Rock Planning Commission unanimously recommended approval of Wellspring Community’s mixed-use conversion at 200 Wolfensberger Road. The plan includes office and program space on the first floor and 24 market-rate apartments upstairs. Town Council will consider the project on December 2.

CDOT Reveals Mobility Hub Finalists
TLDR: CDOT presented three finalist concepts for a proposed mobility hub (combined bus stop and transfer point) during a recent Planning Commission update. The town participated in the selection process, and CDOT is expected to bring a final recommendation to Town Council soon.

☕️ Tried & True: OodeLally

I swung by OodeLally last week and their full Christmas menu is already in rotation. This place always goes all-in on holiday decorating and seasonal drinks, so I figured it was the right stop for something festive. I ordered the Christmas Flight, which comes with four mini drinks: the Grinch, Nutty Elf, Rudolph, and Frosty.

Rudolph ended up being my favorite. White chocolate, caramel, and cherry. Sweet, but not over the top, and it tasted exactly like something you should be drinking in December. The others were solid too, especially if you like peppermint or nutty flavors, but Rudolph is the one I would go back for.

The shop itself is a great hang. Big windows, a nice view, and plenty of room inside. They have a rooftop patio if you want fresh air, and a steady mix of people working, meeting, or grabbing something on the go. It has that warm, local-energy vibe that Oo•de•Lally is known for.

If you want a Christmas drink that actually feels special, the flight is a fun way to try the whole lineup.
